Raw Food: Goji Balls

goji ballsThis is a really easy recipe from the cookbook “Uncooking with RawRose” by Rose Vasile, on Vancouver Island. This is one of the easiest Raw Cookbooks I know of.

Ingredients:

  • 1/3 cup almonds – soak them 8-12 hours
  • 1/3 cup cashews (not soaked)
  • 1/3 cup dried shredded unsweetened coconut (for inside the balls)
  • 1/3 cup Goji berries (not soaked)
  • 1/8 tsp seasalt
  • 1/8 tsp nutmeg
  • 1/3 cup pitted dates
  • 1 tsp grated lemon zest and 2 tbsp lemon juice
  • 2 tbsp dried shredded unsweetened coconut (for coating balls)

Method:

Soak Almonds in water 8-12 hours (I put them on before bed the night before). Drain and rinse.

In a food processor, process almonds, cashews, coconut, goji berries, salt and nugmeg until everything is small bits.

Add dates, lemon zest and lemon juice to mixture in food processor. Process until dates are small and mixture starts to clump together.

Put 2 tablespoons of coconut (for coating) in a small bowl. Squeeze and roll dough into 1¼ inch balls and coat them with coconut. Balls are best if stored for a few hours to allow goji berries to absorb some moisture. Store in fridge and they will last for a week, if you can stop yourself from eating them!!!
